Bikini Recipe

Makes enough for 10 people

Ingredients for the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Place the listed items into a pot, heat until it reaches a light boil, stirring to dissolve. After that, remove from the stove allowing it to reach room temperature entirely. Decant to a sealable bottle, close it keeping it in the fridge, it can be stored for around a month.

For the Premix: Pour all the spirits and syrup into a big jug, leave to sit for an hour, then strain best through cheesecloth, making it completely strained.

To serve: Pour 85ml of your premix into a cocktail shaker filled with ice, and agitate lightly for one minute until cold. Pour to a cold coupe glass or a similar vessel, garnish with some cranberries and complete it using a brief mist with the mandarin essence over the drink.
